This dessert recipe is a no-bake, raw remake of the retro coconut date balls
that my mom and friends used to make in the ‘60s and ‘70s. It only takes a few minutes to make these delicious, healthy raw, dessert balls.
When hosting a tea or luncheon, serve in an assortment of pretty tea cups, as shown in our photograph.
Raw Nutty Coconut Date Balls Recipe
1 cup raw nuts: almonds, pecans or your favorite combination.
2 fresh, organic Medjool dates, pitted and chopped
¼ cup extra virgin, organic coconut oil
2/3 cup coconut flakes
1/2 tablespoon raw honey, or to taste
1 teaspoon Vanilla or almond extract, opt.
Chop the nuts in a food processor. Add dates and blend. Add the remaining ingredients and pulse until moist and thoroughly combined. Shape into balls and place on a wax paper lined tray. Freeze or chill until firm. Store in the refrigerator.
These are delicious with pecans, sliced almonds or a combination. I’ve also made this recipe using ¾ c. pecan and ¼ c. pumpkin seeds. You can also roll the finished balls in additional coconut flakes for a pretty presentation.
