Delicious and refreshing as a peppermint pattie! This soft serve ice cream recipe takes a minute to make in the Vitamix or high powered blender and is filled with wholesome ingredients. No freezer required. That's right, this delicious chocolate mint ice cream is ready to serve right out of the blender, or at least spoon it into bowls to share. It's that easy and packed with wholesome ingredients, you'll want to prepare this nutritious, non-dairy, blender treat often.
CHOCOLATE MINT ICE CREAM BLENDER RECIPE
Soft Serve, Non Dairy, Nutritious, Blender Ice Cream
½ cup (heaping) fresh avocado
2 tablespoons organic cocoa powder (reg. or dark)
¼ teaspoon stevia powder
½ cup almond milk or coconut cream
¼ cup raw honey
3 drops food-grade peppermint essential oil, or 1/8 teaspoon peppermint extract
3 cups ice cubes (1 tray)
Layer ingredients in a Vitamix or other high-power blender, in order given above. Start Vitamix at lowest, variable setting and slowly increase speed to 10, then high setting. Using the damper, press ice cubes into the mixture and blades, while blending. Press until ice is crushed and thoroughly incorporated into mixture. The sound of the motor will decrease once the ice is crushed. Stop machine once ice cream is smooth. Process takes about 30 seconds from start to finish. Serve immediately.
